New Sales Leadership Strengthens Marcus® Hotels & Resorts Group Book Efforts

When it comes to hosting successful meetings, Marcus® Hotels & Resorts has more than 55 years of expertise in the Milwaukee area. To continue to strengthen its efforts, the company recently announced the promotion of Dana Johnson from assistant director of sales to director of sales for the Milwaukee market. In this role, Johnson oversees group sales for Marcus Hotels & Resorts’ Milwaukee properties – Hilton Milwaukee City Center, InterContinental Milwaukee and The Pfister Hotel. In addition to Johnson’s promotion, the company named Megan Seppmann as new assistant director of sales for the Milwaukee market.

Dana Johnson Marcus Hotels and Resorts

With more than 25 years of experience working in hotel group sales, Johnson has spent the majority of her career – 15 years – with Marcus Hotels & Resorts. She began her career with the company in the sales department at The Pfister Hotel and was an original member of the sales team supporting the broader Milwaukee-area Marcus Hotels & Resorts properties. In 2013, Johnson was promoted to assistant director of sales, where she excelled in developing new members of the sales team and maintaining strong relationships with several key corporate accounts.

Megan Seppmann MArcus Hotels & Resorts

Seppmann joins the Marcus Hotels & Resorts sales team with more than 16 years of experience in the hospitality industry. As assistant director of sales, she will work alongside a talented group of sales leaders to showcase Marcus Hotels & Resorts’ downtown Milwaukee properties. Prior to working at the company, Seppmann served at several properties owned or managed by CSM Corporation, a Minneapolis-based property management company. While with CSM Corporation, she was director of sales and marketing at the Residence Inn by Marriott located in Milwaukee and senior sales manager at the Courtyard by Marriott Bloomington located in Bloomington, Minnesota. She also held senior sales roles at Kahler Hospitality Group properties in Rochester, Minnesota and at three hotels in Mankato, Minnesota. Seppmann received a bachelor’s degree in hospitality management from Southwest Minnesota State University.

Mason Street Grill’s new Chef’s Counter to Celebrate the Diverse Culinary Traditions of Restaurant’s Staff Members

No matter where you are in the world, food can bring diverse people and interests together around one table. That is the focus behind Mason Street Grill’s new Chef’s Counter experience – Eating Global in the Neighborhood. Rotating every eight weeks, the Chef’s Counter at Mason Street Grill, part of the Marcus® Restaurants Group, will feature unique dishes celebrating the diverse culinary traditions of the restaurant’s staff.

The first Chef’s Counter menu is now available and features:

Appetizer: Tuna kilawin ($19) with coconut, lime, red onion, pickled red chili and cilantro – This dish comes from Brian Pascua, line cook intern, who is from the Philippines.
Entrée: Pan-fried trout ($38) with ginger, lemongrass, tomato, mint and dill – This dish is from line cook Chris Xiong and highlights his Laos/Hmong heritage.
Side: Fasolakia ($8), which includes green beans, tomato, oregano, lemon and extra virgin olive oil – This dish comes from cocktail server Christina Manolatos, who is from Greece.
Dessert: Tres leches cake ($9) with Rumchata whipped cream – This dish is from line cook Christian Garcia-Cortez and celebrates his Mexican heritage.

• A new lobster salad roll,
• Teriyaki glazed salmon,
• Green curried mussels, and
• A tuna poke bowl.

The Lincoln Marriott Cornhusker Hotel Honored with the Inaugural Innovation Stars of the Industry Award

The Lincoln Marriott Cornhusker Hotel, owned and managed by Marcus® Hotels & Resorts, announced today it has received the inaugural Innovation Stars of the Industry Award from the Nebraska Hotel and Lodging Association (NHLA). The property was recognized for its dedication to innovation through its various community-directed programs and initiatives, along with its role as a brand ambassador for the city of Lincoln, Neb.

Since Marcus Hotels & Resorts became the majority owner and manager of the hotel in 2012, The Lincoln Marriott Cornhusker has implemented numerous programs designed to support various community initiatives and has inspired other Lincoln hotels to participate in its efforts. Four properties receive the distinguished AAA Four Diamond Rating in 2018

Marcus® Hotels & Resorts, a nationally recognized hotel management company and division of The Marcus Corporation (NYSE: MCS), today announced that four of its owned and managed properties have again received the esteemed AAA Four Diamond Award® in 2018. These awards follow a year of numerous accolades for Marcus Hotels & Resorts’ properties across the nation.

The Pfister Hotel in Milwaukee remains one of only 12 hotels in North America that have maintained AAA Four Diamond status since the Diamond Ratings were first introduced in 1976. Other Marcus Hotels & Resorts properties that have received the AAA Four Diamond Award in 2018 include the Grand Geneva Resort & Spa in Lake Geneva, Wisconsin, recognized for the 20th consecutive year; the historic Skirvin Hilton in Oklahoma City, recognized for the 11th consecutive year; and the Hilton Milwaukee City Center, the major convention hotel in Milwaukee, recognized for the seventh consecutive year.

The Pfister® Hotel Names Stephanie Schultz as Next Artist in Residence


Program is celebrating 10th year of promoting the works of local artists

The historic AAA Four Diamond Pfister® Hotel, owned and managed by Marcus® Hotels & Resorts, today announced Stephanie Schultz has been selected as the hotel’s next Artist in Residence. As the program celebrates its 10th anniversary, Schultz, a Milwaukee-area fashion designer, will work in the hotel’s lobby-level Artist’s Studio for one year beginning April 1, 2018. She is succeeding current Pfister Artist in Residence and tintype photographer, Margaret Muza.

“I am thrilled to be the next Artist in Residence as The Pfister celebrates the program’s 10th anniversary. It will be an honor to share my enthusiasm for fashion design with a community that I love,” said Schultz. “What I value above all else is learning through experience, and my time in this residency will certainly teach me a lot. I tell stories with my garments, specializing in historically-inspired couture, and what I learn through my emotions and inspiration is channeled into the fabric. As The Pfister Hotel’s next Artist in Residence, I cannot wait to use this opportunity to share my work with a broader audience and create truly unique pieces inspired by the 125-year history of this iconic hotel.”

Schultz’s work is often inspired by antique art and architecture, making The Pfister Hotel a perfect fit for her next collection. As an artist, she is no stranger to exploring new styles and designs. Her work has transitioned from counter-culture streetwear to couture and avant-garde. In 2005, Schultz began her fashion label, Silversark, as a way to bring Japanese street fashion to a Western audience. Recently, she has experimented with fashion elements from the Tudor-era through the Roaring ’20s, and translated them into contemporary designs. Through her passion and dedication for fashion design, Schultz has unveiled a number of different lines and collections under Silversark.

As part of her residency and as an homage to The Pfister Hotel’s invaluable Victorian art collection, Schultz will spend her yearlong residency designing a 16- to 20-piece fashion line inspired by the subjects in the hotel’s expansive art collection. This will include photographing, compositing and printing replicas of select hotel paintings on fabric to create one-of-a-kind wearable art. Her residency will culminate in a fashion show, presenting the full collection in The Pfister Hotel’s Imperial Ballroom. The final piece of her collection will serve as a Legacy Piece for the hotel, which will go on permanent display in the property.

Schultz was one of six finalists included in a four-week public voting period. In addition to the public vote via Facebook and in-person ballots, a selection committee, consisting of leaders in the local arts community, made the final decision in choosing the next Artist in Residence.

For the third time in the history of the Artist-in-Residence program, Schultz was also selected as the winner of the public vote. The public vote winner typically receives the opportunity to display his or her work in a solo exhibit at Gallerie M inside the InterContinental Milwaukee, also owned and managed by Marcus Hotels & Resorts. Because Schultz was also selected as the winner of the public vote, the public vote runner-up, Alice Wilson, a local living statue performer and costume artist, will receive the honor to showcase her work at Gallerie M this year. Both artists will receive a $300 gift certificate to Utrecht Art Supply, located in Milwaukee’s Historic Third Ward. All finalists from this year and years past will be offered additional opportunities to show their work at future Pfister-sponsored events.

Control Assigns New Secret Agents to SafeHouse Milwaukee

Control, the clandestine organization tasked with establishing and maintaining SafeHouse Restaurants in Milwaukee and Chicago, announced today that it has assigned two new agents to SafeHouse Milwaukee. Agent Change, a.k.a. Nick Dillon, joins the restaurant as the new Chief of Staff (general manager), and Agent Bacon, a.k.a. Craig Larson, was named the new Chief Culinary Agent (kitchen manager). Collectively, Agents Change and Bacon will manage all aspects of SafeHouse Milwaukee.

Agent Change
In his new role as top operative at SafeHouse Milwaukee, Agent Change will be responsible for overseeing all secret missions and operations at the restaurant. He has more than 15 years of experience working in the restaurant industry around the country, including assignments as general manager of southeastern Wisconsin’s Water Street Brewery and St. Francis Brewery. While at St. Francis Brewery, Agent Change partnered with Milwaukee County Parks and successfully launched Milwaukee’s Craft Beer Garden in Humboldt Park, which remains one of the city’s premier beer gardens during the summer.

Before going undercover at The SafeHouse, Agent Change was stationed at the Milwaukee Burger Company in Franklin, Wisconsin. He has also worked as general manager of the oldest Mexican restaurant in continuous operation by the same family in the U.S. – El Charro Café – located in Tucson, Arizona. He is originally from Burlington, Wisconsin and currently resides in Glendale, Wisconsin with his wife Sarah and their three children Liam, Harrison and Penelope.

Agent Bacon, also a Wisconsin native, has more than seven years of experience working in the restaurant industry in Wisconsin and Illinois. Prior to joining the stealthy team at SafeHouse Milwaukee, Agent Bacon served as executive chef of Di Moda on Milwaukee’s lower east side, which he helped open. He has also held positions at Milwaukee’s Screaming Tuna as executive sous chef and Madison, Wisconsin’s Ale Asylum as the assistant kitchen manager. Early in his career, Agent Bacon worked as a sous chef at Giovanni’s Restaurant and Convention Center in Rockford, Illinois.
